A Uruguayan classic, the chivito is a must-try for anyone visiting the country. It’s a huge sandwich with a multitude of toppings.

This fabulous culinary creation was invented in 1946 at a restaurant in the Uruguayan resort city of Punta del Este when an Argentinean guest ordered a “chivito”, literally baby goat meat. The restaurant owner improvised by whipping up his own special creation. He put together seasoned grilled beef and ham on toasted bread, and the rest is history.

I tried my chivito at Sacramento Rock in the historic city of Colonia del Sacramento. I had some extra time to kill with a group of friends while waiting for the ferry back to Buenos Aires. In all honesty, I wasn’t expecting the sandwich to be nearly as big as it was. When it was delivered to the table, the sandwich was filled with churrasco (grilled beef) and ham, a fried egg, lettuce, tomato, mayo, mozzarella, and green olives. It was accompanied by a huge side of fries.

The sandwich was a little hard to eat but it was delicious! As you can imagine, it was also extremely filling. I instantly became a fan and can’t wait to have another one.
